Okay, so these aren’t orgasmic unless you’re 8 years old or are craving a cookie or a piece of candy or maybe both. You may also have your mother’s recipe from when she made them when you were a kid.
If you’ve got a must-have urge for a cookie, these could be considered orgasmic. If you’re an American living outside the US and you’ve got a hankering for chocolate and peanut butter which aren’t normally found together anywhere else in the world, then these are definitely orgasmic. Truly. They’re a cross between an oatmeal/peanut butter/chocolate cookie and a piece of chocolate fudge.
The best bit is that they take about 5 minutes to make. Honestly, it takes longer to take the few ingredients out of the pantry than it does anything else. You cook the butter, sugar and cocoa until it boils and then pour it over the oats, peanut butter and coconut. Don’t like coconut? add nuts. It’s the chocolate mixture and the oats that set the cookie so you could put anything in there – maybe even chopped up candy canes. I didn’t have any or I would have tried it for you.
I had some Weetbix for breakfast and then about noon I wanted something sweet. I didn’t want lunch but I wanted a treat. I’m trying not to have any purchased snacks in the house to ensure that I’m not tempted but then there was nothing to satisfy my sweet tooth. I’d probably have been better off with a TimTam or Oreo but alas, poor planning on my part.
I thought about pie because it’s my favorite dessert but that meant making the dough, chilling it, rolling it out, preparing the apples and by the time I thought all that, I realized I wanted something NOW, not later. I haven’t made these cookies in a long time but they’re perfect for an instant chocolate craving. Even before they set you can eat one with a spoon. (I might have, just sayin…)
If you have children, they’ll love helping to make these cookies because they don’t require a long attention span. From start to finish there’s no waiting, although the batter is a bit warm. Use a small ice cream scoop and the kids won’t touch the warm cookie. They harden in about 15 minutes although they’re cool enough to eat in 5 albeit a teensy squooshy.
This week I went to a photograpy workshop by Christian Uhrig and learned heaps but I apologize that it doesn’t show in these photos. I’m still practicing. I’m trying to learn Lightroom too. I’ve used Photoshop since 1995 but I was encouraged to use Lightroom because of the ease of cataloging the photos. I have a long way to go — I got the photos in there but they aren’t in any catalog. Perhaps I should head to youtube for the tutorials as I’ve been told there are some good ones there. Simone from JungleFrog Cooking also suggests we use Lightroom so I’m definitely going to sort it out.
Sadly, none for Charlie and he wasn’t impressed. 30 seconds after taking the shot above he dropped his ball through the gaps in the fence into the canal and squeezed himself through the deck railing and was happily pawing the sand hunting for that ball. He did get the ball out but not before burying it a foot deep in the sand. I suspect the baby crabs who live there weren’t impressed. Then I had to wash off all the sand on him and the ball and myself. A dog covered in sand who shakes gets it on any nearby surface, including me.

- 2 cups granulated white sugar
- 6 tablespoons unsweetened cocoa
- ½ cup butter (1 stick)
- ½ cup milk (any kind, even evaporated)
- ½ cup creamy peanut butter
- 1 teaspoon vanilla
- 3 cups Old Fashioned Quaker Oats
- ½ cup shredded coconut
- Combine sugar, cocoa, butter and milk in saucepan, bring to a boil.
- Add vanilla extract.
- While mixture is heating, add remaining ingredients to a large bowl and lightly mix.
- Remove from heat and pour over the peanut butter, coconut and oats. Stir well
- Drop by spoonsful onto baking paper
- You can speed things up by placing cookies in the fridge for 10 minutes.
