This is an easy, family dinner that can be made in a jiffy. It could even go in a slow cooker and be ready for dinner.

Ingredients
½ onion finely chopped
1 pat butter
1 egg, slightly beaten
½ cup finely crushed cracker crumbs (bread crumbs will work too)
½ can condensed cream of mushroom soup (You can use the other half to make gravy)
½ teaspoon salt
⅛ teaspoon pepper
1 pound minced (ground) beef
Instructions
Preheat oven to 185C/365F
Mix all ingredients in a bowl until well blended and either place in a loaf pan or shape on a rimmed baking sheet.
Bake for 1 hour
Notes
It's easy to increase the portions by adding another pound of ground beef and a little more soup, salt and pepper. If it seems too wet, add more cracker crumbs.
