Whole Roasted Pineapple Sorbet

- 1 whole pineapple - green leaves on top removed
- Simple syrup (1 cup sugar - ½ cup water boiled til sugar dissolves)
- 1 tbsp fresh squeezed lemon juice
- ¼ cup water
- Preheat oven to 200°C (400° F)
- Place pineapple in a roasting pan and place in the oven for 1½ to 2 hours til soft.
- Cut away all the outer skin and remove brown bits
- Cut into quarters and remove core and discard
- Cut pineapple into chunks and place in food processor.
- Whiz pineapple and then taste for sweetness
- Add simple syrup to taste
- Add lemon juice and water
- Process for 2-3 minutes til smooth
- Place in refrigerator til chilled
- Freeze in ice cream maker according to directions
I think if I made this again I would add just a bit more water make it into popsicles
