Do you ever make things because they are all over the net? I don’t normally follow trends maybe because I can’t seem to get myself in gear and buy the ingredients I don’t have in the pantry but I don’t think so. I’ve never been a trendy person.
I’m someone who’ll buy something classic and know it will be with me forever. At least that’s what I tell myself but yesterday I caved in.
All over Pinterest I saw these flourless chocolate cookies and I’d just made ice cream for John and Rob. (I needed to make ice cream to use up the fresh strawberries that were nearing the end of their life – so need is probably suspect.) I had 5 egg whites just sitting there going begging and all I had to add was icing (confectioner’s) sugar and cocoa and chocolate chips.
Alas, all I had was white chocolate chips so that’s what we ended up with. The verdict? “They’re okay but they should be crunchier,” Rob said. I thought they were just fine but I don’t think they live up to their hype.
There is nothing wrong with them and they couldn’t be easier to make. I think I’d prefer some made with almond or other nut meal to give them some oomph.
Have you tried them? What did you think?
- 3 cups icing sugar (confectioner's sugar) sifted
- ⅔ cup dark cocoa (or any cocoa will do)
- large pinch of salt
- 1 to 1½ cups chocolate chips (semi-sweet or white)
- 4 large egg whites
- 1½ teaspoons vanilla extract
- Preheat oven to 180C/350F
- Combine all the dry ingredients in a large bowl, then add the chocolate chips
- Add the egg whites and mix with a spatula until well combined. If they are too runny, add some icing sugar. (I had to add nearly ¼ cup more.)
- Place by double tablespoon on baking paper lined baking tray
- Bake for 14 minutes and see how you like them. These were just a bit crunchy.
Finally, I must say a huge thank you to Charlie Louie, Lorraine, Tania, Claire and Celia. When they found out I had a bit of an issue with the ticker, they sent me a wonderful gift and today Celia sent me some of her fantastic dark chocolate. She’s a marvel with anything in the kitchen but most especially with bread and chocolate. I got some Queensland cane Toads and some chocolate tickets. I’ve already eaten a frog and I’m much better already.
Well….they look delicious. I’ve got them on my to-do list too!

I made a version of these cookies a while back, they were called meringue cookies and we quite liked them, very chocolatey and chewy which are high on both my and JTs list. Your version turned out beautiful, shiny and rich looking. I’d say winner for sure.

Oh funny, sometimes that something people are so crazy about doesn’t live up to the mark.
But, my teen would love this choclatey goodness, he can eat anything chocolate, your cookies do look really good.

Ticker problems? I hope things are OK! Great looking photos – you have some really nice highlights on the cookies. Sorry to hear they’re a bit of a dud, though. I have to say, all that sugar would give me pause. Are these insanely sweet? I think I might substitute peppermint extract for the vanilla – it wouldn’t cut the sweetness, but might add a little sharpness.
Such a rich, dark, dark chocolate. YUM YUM These look so good I wanted to pick one up from the plate and bite into it.
Best of all recipe looks easy enough even this non-baker will try it. 🙂
Even though cookies aren’t something I eat very often these seems so rich and chocolatey. Perfect to eat with a glass of cold milk or hot coffee.

There is a bit of a gluten free trend on at the moment, so many recipes without flour but I’m so glad I have no gluten intolerance because I use flour in all baking and sometimes the substitutes just aren’t the same…

Nope, I definitely don’t make things just because they are trendy, but if it piques my interest, I will for sure. These look pretty amazing and since they are not crunchy they might be great warm with ice cream on top. These caught my attention because they look delicious and somewhat low carb
It’s made with egg and icing sugar. I doubt that much sugar would be low carb. I like the ice cream on top idea. 🙂
I’ve made some cookies similar to these; they were delicious. I added chopped nuts instead of chocolate chips though. I think they would have been blandly sweet without the nuts.

I haven’t tried flourless chocolate cookies yet – they certainly look rich and chocolatey!
I tried these today but didn’t realise I didn’t have enough icing sugar so added some gluten-free flour and then it was too dry so added another egg. They were okay but didn’t exactly get the thumbs-up from the family. Back to the drawing board. I will get some more icing sugar.
nah I am a trendsetter =D so I don’t follow trends. I haven’t seen chocolate flour less cookies in pinterest, must have missed that. lol Maureen they look fantastic, I ll show them to my husband later on, so he can decide if he wants some soon.
A problem with the ticker??? I hope you are okay! And if anything, chocolate heals all, especially the heart! These cookies are outrageous and seeing the ingredients and how they are made I can tell they are really good. Bookmarked! Now take care of yourself!

These cookies look over the top delicious-sometimes they are not what they seem. Darn, at least I know before it jumps out at me on Pinterest. Looks like the recipe may need some tweaking to give it “oomph”

i used to follow all the trends until i ended up with copious amounts of things ill never use again! these look nice but i still love my flour based cookies for texture!
